Recipe Ingredients for Chickpea/Couscous Salad

1 cup garbanzo beans
1 1/2 cups cooked couscous
1 red pepper
15 black olives
3 ounces fat free feta cheese
2 tablespoons balsamic vinegar
1 tablespoon chopped garlic
1 cucumber
1 ounce sun dried tomato

Recipe Directions for Chickpea/Couscous Salad

  1. Cook couscous. It is usually bought precooked so it's quick.

  2. Rinse garbanzo beans and add to a big bowl.

  3. Chop up pepper, olives, cucumber and sundried tomato and add to bowl.

  4. Add feta.

  5. Add garlic.

  6. Add couscous.

  7. Add vinegar.

  8. Mix.
