Very fresh and satisfying salad, rich in fiber and protein, and enough carbs to keep you going all afternoon with not all that much calories.

Recipe Ingredients for Chickpea and Codfish salad

200 grams Garbanzo Beans (Chick Peas), Organic
100 grams Salted Codfish
2 1tsp Olive Oil
2 tbsp chopped Onions
4 serving Vinegar
0.25 cup Parsley

Recipe Directions for Chickpea and Codfish salad

  1. Drain and rinse the chickpeas.

  2. Boil the codfish if it is the pre de-salted kind. If its not, you must soak it for at least a few hours, preferably changing the water from time to time. There is also no need to be the salted kind, but where I live we don't get fresh codfish, only the salted or salted and pre de-salted frozen kinds.

  3. Drain the boiled codfish (and you could save the water/broth and freeze it for another use).

  4. Chop the onion and parsley.

  5. Separate the fish into bite-size bits.

  6. In a serving bowl or hermetic container (lunchbox) mix the chickpeas, the torn codfish, the chopped onion and parsley and season with olive oil and vinegar. Mix well, or cover the container and shake.

  7. Refrigerate and serve chilled or at room temperature. It will keep in the fridge for a 2 or 3 days.

  8. Ideas and variations: this is a great make-ahead lunch, very practical to take to work or on a picnic and can be dressed up or down according to your needs. This serving was designed as a part of a 1200 cal diet, but if you ar, lets say, on a 1800 cal diet you could add a boiled egg (wich is part of the original traditional portuguese recipe and I removed).

  9. There is also a variation of this recipe made with canned tuna and black eyed peas. Again, it can be incremented by adding a boiled egg or taken down a notch by cutting the olive oil by half.

  10. May also be used as an appetizer or first course by using the same portions but serving about 4 people.
