Very yummy soup but pretty high in fat. You could cut the chorizo in half to reduce the fat content and then add some more veggies like green beans and kale.

Recipe Ingredients for Chickpea, Chorizo and Sweet Potato Soup

2 tsp olive oil, plus more for drizzling
5 oz chorizo, casing removed and diced
1 small yellow onion, diced
15 oz. chickpeas, drained and rinsed
1 sweet potato, peeled and roughly diced
1/4 cup carrot
1/4 cup celery
4 cups, Health Valley, No Salt Added Chicken Broth - Broths
2 cups water
5 cloves garlic
1 tsp smoked paprika
1/2 tsp cumin
1/2 tsp coriander
1/2 tsp. cayenne pepper
1/2 cup parsley
1/2 cup cilantro

Recipe Directions for Chickpea, Chorizo and Sweet Potato Soup

  1. Set a large pot over medium heat. Once it?s hot, heat the olive oil and add the chorizo. Saute for a couple of minutes until the fat just begins to render. Add the onions and cook for an additional 5 ? 6 minutes, until the onions begin to turn translucent.

  2. Add the chickpeas and saute for about 8 ? 10 minutes, or until the chickpeas start to toast and slightly stick to the bottom of the pan. Add the sweet potatoes, garlic, cayenne pepper and stock then reduce to medium-low and simmer for 20 minutes.

  3. Using an immersion blender, pulse the soup to break up the larger potato pieces. If you don?t have one, you can also use a potato mashed or potato ricer to mash the potato pieces into the broth.

  4. Add the kale (if using) and simmer for an additional 10 minutes. Ladle into bowls and top with parsley and cilantro.
