Light, low fat vegetarian soup, very easy to make

Recipe Ingredients for chickpea, chilli and coriander soup

1 medium onion, diced
1 cup green beans, diced
224 g canned chick peas
4 medium carrots, diced
1 medium potato, peeled and diced
5 cloves garlic
1 l water
1/4 cup cilantro
2 tbsp peppers, diced
1/2 tbsp ginger
1 tsp olive oil

Recipe Directions for chickpea, chilli and coriander soup

  1. saute onion and carrot in olive oil.

  2. add garlic, ginger, chilles, fry for a bit. then add 1tbsp ea cumin and coriander, fry few more seconds, add 1 tbsp turmeric, fry few seconds

  3. add chickpeas with water from can, add potato and green beans, some stock powder and boiling water, or ready made stock

  4. add some salt and pepper if desired

  5. cook until veg is soft, puree, reheat and add fresh cilantro, keep some for garnish.

  6. Add some lemon juice, adjust seasoning and serve hot
