vegetarian chili - easy to prepare

Recipe Ingredients for chickpea chili

1/2 tsp olive oil
1 med onion - chopped
2 cloves garlic - crushed
1/4 tsp chili powder
5 oz vegetable stock
1/2 tsp sugar
14 oz chickpeas
14 oz chopped tomato
1 medium carrot - finely chopped
1 red pepper - chopped
1 small zucchini - roughly sliced
8 button mushrooms - quartered

Recipe Directions for chickpea chili

  1. saute onion in olive oil - 5-6 minutes

  2. add crushed garlic and cook 1 minute longer

  3. add remaining ingredients and simmer 10 minutes

  4. Serve with salad (3 1/2 oz) and brown rice (3 Tbsp)
