Chickpea Cauliflower Soup Recipe

A zesty combination perfect for a cold winter's night. Ignite the intensity by adding a pinch or two of cayenne pepper. As a meal, add some brown rice and serve with a salad or fruit, such as homemade applesauce. Adding a sliced lemon during cooking also adds a different more pungent taste.

Recipe Ingredients for chickpea cauliflower soup

15 oz. chickpeas
1 1/2 cups of chopped onions
1 tbsp canola oil
1 1/2 tbsp grated ginger root
1 1/2 tbsp curry powder
1/2 tsp salt
3 cups vegetable broth
28 oz chopped tomatoes
2 cups cauliflower

Recipe Directions for chickpea cauliflower soup

  1. In a soup pot on medium heat, cook the onions in the oil for a few minutes, until they begin to soften. Add the ginger, curry powder, and salt and sauté for a minute or two, stirring constantly so the pieces don?t burn. Add the chickpeas and water, cover and bring to a boil.

  2. Meanwhile, cut the cauliflower into bite-size pieces. When the water boils, stir in the cauliflower and tomatoes, reduce the heat, cover and simmer until the cauliflower is tender, about 10 minutes.

  3. When the cauliflower is done, remove from the heat. Puree 2 or 3 cups of the soup in a blender and stir it back into the pot. Top each bowl of soup with your favorite chutney and a sprig of cilantro.
