you can add cherry tomatoes if you want to "unspice" it a bit. I also sometimes add spinach and red pepper whenever I have some in the fridge. Also, it's even better on the second day!

Recipe Ingredients for Chickpea and Cauliflower Curry

0.25 cup Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds, Canned
1/2 cup (1" pieces) Cauliflower
1 pat (1" sq, 1/3" high)(5 g) Butter
2 tsp Ethnic Seasoning Vindaloo Curry
0.75 cup Rice, White, Long-grain, Regular, Cooked
1 medium (2-1/2" dia)(110 g) Onions

Recipe Directions for Chickpea and Cauliflower Curry

  1. Toss the beans and broken up cauliflower in a bowl with the curry paste and 2-3 cups of water.

  2. Put your rice to boil.

  3. Melt your butter in a big pot and add the onion. Let this cook until they are soft. You can also throw in a bayleaf and some garlic.

  4. Add the marinated veggies and beans. Get to a boil, then reduce to a simmer. Add water if it does not cover the veggies.

  5. Put a lid on the pot, let simmer until the cauliflower is soft (usually 30-45 mins).
