Indian-inspired, vegan casserole w/chickpeas, rice, and corn. This reheats wonderfully, so it makes a great lunch.

Recipe Ingredients for Chickpea casserole

100 g onion, diced
1 tbsp olive oil
65 g brown rice
14 oz creamed style corn
540 g chick peas

Recipe Directions for Chickpea casserole

  1. Cook rice according to package directions. Set aside.

  2. Soften onions in the olive oil.

  3. Drain and rinse chickpeas.

  4. Combine all the ingredients in a casserole dish, and season to taste w/cumin,curry powder, garlic powder, salt, and pepper.

  5. Bake at 400 F for 20 min, until bubbly.
