Chickpea, Carrot, and Currant Salad

Recipe Ingredients for Chickpea, Carrot, and Currant Salad

15 ounce Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds, Canned
2 cups shredded carrots
1 cup currants
1/4 cup cilantro
1/4 cup parsley
2 tablespoons olive oil
1 tablespoon orange juice
1 tablespoon lemon juice
1/2 teaspoon caraway seeds
1/2 teaspoon coriander seeds
1/2 teaspoon cayenne

Recipe Directions for Chickpea, Carrot, and Currant Salad

  1. Mix the chickpeas, carrots, and currants in a bowl.

  2. In a separate bowl, mix the rest of the ingredients. Pour this mixture over the chickpeas, carrots and currants. Mix well and refrigerate at least one hour in a sealed container before enjoying.
