The flavour of falafel but less fat!

Recipe Ingredients for Chickpea, carrot and coriander balls

250 gram cooked chickpeas
1 cup couscous (dry weight)
200 gram carrot
2 tsp ground cumin
2 tsp ground coriander
1 medium onion
4 cloves garlic
1/4 cup parsley
2 tsp lemon pepper

Recipe Directions for Chickpea, carrot and coriander balls

  1. Make the couscous by adding a cup of boiling water to your dry couscous

  2. Meanwhile, using food processor, mince the veges, chickpeas, adding seasonings till well combined

  3. Roll into small balls (nutritional info calculated for 32 balls) with wet hands

  4. Bake about 30 minutes at 180, turning half way through or when the bottoms are browned

  5. I eat these served with salad and pita bread.

  6. It makes approx 32 balls, so will serve 4-6 people easily
