Recipe Ingredients for chickpea burger

2 cups chickpeas (drained)
1/4 cup parsley
1 clove garlic
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon chili powder
1 small egg
1/4 cup bread crumbs
1/3 cup ricotta cheese
1/4 cucumber
1 small red onion
1 small tomato
1/2 cup spinach
4 whole-wheat dinner rolls

Recipe Directions for chickpea burger

  1. preheat broiler high - combine chickpeas, parsley, garlic, spices. Partially mash the chickpea mixture; stir in egg and 2 tablespoons panko and shape into patties.

  2. Spread remaining panko on plate and dredge patties. Place on baking sheet 8 to 10 inches from heat, cook 4 to 5 minutes each side.

  3. Serve burgers on buns with ricotta. cucumber, onion and tomato.
