Recipe Ingredients for Chickpea Broccoli Casserole

45 oz chickpeas, drained and rinsed
1 large onion, quartered and thinly sliced
3 large carrots, grated
1 stalk broccoli, cut into small florets
1/4 bagel whole wheat bread crumbs
3 tbsp olive oil
1 c vegetable broth
1 tsp salt

Recipe Directions for Chickpea Broccoli Casserole

  1. Preheat oven to 350 F.

  2. In a large bowl, mash the chickpeas well, using a potato masher or fork; it takes about 2 minutes to get the right consistency.

  3. Add the vegetables and mix well. Add the bread crumbs and mix, then add the oil and mix again. Finally, add the vegetable broth and salt, and mix one last time.

  4. Transfer all the ingredients to a 9x13 casserole dish. Press the mixture firmly into the dish. Cover with foil, bake for 45 minutes. Uncover and bake for 15 more minutes.
