Roasted Beets, Chickpea and Zucchini Salad

Recipe Ingredients for Chickpea Beet Salad

15 oz Garbanzo Beans (Chick Peas), Organic
400 grams Beets
1.5 tbsp Olive Oil
1/4 tsp Sea Salt
1 dash Pepper, Black
360 grams Squash, Summer, Zucchini, Includes Skin
1 tbsp chopped Onions

Recipe Directions for Chickpea Beet Salad

  1. Brush beets with olive oil and roast at 400 degrees for 35 minutes or until cooked through.

  2. Peel skin from beets when cool. Chop.

  3. Roast zucchini to desired doneness. Chop.

  4. Drain and rinse chickpeas.

  5. Mix all with olive oil and spinach. Add Salt, pepper, onion, additional herbs to taste.
