Recipe Ingredients for Chickpea and Artichoke Heart Masala

1 large red onion, chopped (about 2 cups)
1 clove garlic
2 t ginger, peeled and chopped (tsp)
3 large Roma tomatoes, chopped
2 tablespoons canola oil
1 teaspoon cumin seed
1 teaspoon ground coriander
1/2 teaspoon garam masala
1/4 teaspoon paprika
1/4 teaspoon turmeric
1/4 cup yogurt, whisked until smooth
1 tablespoon lime juice (about 1/2 a lime)
14 1/2 ounce chickpeas, drained and rinsed
14 1/2 ounce artichoke hearts, drained, rinsed, and halved
1 Kosher salt
1/2 cup water
3 T cilantro, chopped

Recipe Directions for Chickpea and Artichoke Heart Masala

  1. Process the onion, ginger and garlic in a food processor until smooth.

  2. Warm the oil in a large skillet over medium-high heat until simmering. Add the cumin seeds and cook until they stop popping.

  3. Add the onion mixture and cook for about 10 minutes until thickened (mixture will darken slightly)

  4. Add ground coriander, garam masala, paprika and turmeric and cook for 30 seconds or until aromatic.

  5. Add the yogurt (a little at a time so it won't curdle).

  6. Stir in the lime juice, chickpeas, artichoke hearts and salt to taste. Add a touch of water if necessary.

  7. Cover and simmer 10 minutes. Top with cilantro & serve.
