Recipe Ingredients for Chicken Zucchini Pasta

4 cup, chopped Squash, Summer, Zucchini, Includes Skin
32 oz Fresh Boneless Skinless Chicken Breasts
2 cup, pieces or slices Mushrooms
1 tsp chili powder
1/2 tsp Sea Salt
1/2 tsp Pepper, Black
2 serving(15 g) Extra Virgin Olive Oil
2 clove Garlic
1 large Onions
6 sun-dried tomatoes
2 medium Red Bell Pepper
2/3 cup Coconut Milk

Recipe Directions for Chicken Zucchini Pasta

  1. Marinate chicken in 1 Tbs olive oil, sea salt (optional), black pepper, chili powder and garlic. Refrigerate for 1 hour.

  2. Using a vegetable peeler and turning the zucchini as you go, slice the zucchini into ribbons. In a skillet, over medium heat, sauté zucchini in 1 tablespoon of oil until it's soft and the edges are clear. Add salt and pepper to taste.

  3. Saute marinated chicken until browned and almost fully cooked.

  4. Heat 1 Tbs olive (or coconut) oil in another skillet. Add onion and saute for about 5 minutes, stirring occasionally. Add mushrooms and sundried tomatoes and continue to cook until tender.

  5. Add red pepper, coconut milk and browned chicken and stir. Cook for an additional 5-10 minutes, or until the chicken is completely done.

  6. Spoon sauce over zucchini. Sprinkle with Parmesan to taste.
