Baked chicken zucchini meatballs with parsley and parmesan

Recipe Ingredients for Chicken Zucchini Meatballs

225 grams Chicken, ground, raw
130 grams Squash, Summer, Zucchini, Includes Skin
30 grams Bread, Whole-wheat, Commercially Prepared
0.13 cup Bread Crumbs, Dry, Grated, Plain
3 clove Garlic
0.17 medium raw Onion Red
1/4 cup Parsley
1 1/2 tbsp Spearmint, Fresh
30 grams Grated Parmesan and Romano Cheeses
2 tsp Garlic Powder
1/4 teaspoon Worcestershire Sauce
1/4 tsp, ground Basil, Dried
2/5 grams Premium Selection Italian Seasoning
1/4 tsp Barbecue Seasoning
1/4 tsp Paprika
0.13 tsp Salt, Table
0.13 tsp Pepper, White
0.13 tsp Oregano, Ground
0.62 tsp Vegetable Oil, Canola
40 grams Aquafina
0.17 cube Beef Flavor Bouillon

Recipe Directions for Chicken Zucchini Meatballs

  1. Preheat oven to 375F.

  2. Grate 2 medium zucchini and squeeze out excess; should weigh 130 grams after discarding liquid.

  3. Grate onion and garlic.

  4. Chop mint and parsley finely.

  5. Dissolve 1/6 beef bouillon in 40 ml water. Wet bread with water and mash. Combine with chicken zucchini, breadcrumbs, garlic, onion, mint, parsley, dried basil, oregano, italian seasoning, bbq seasoning, garlic powder, salt, pepper, paprika, and parmesan and mix well.

  6. Divide mixture evenly to 12 meatballs.

  7. Grease baking pan with 1/2 tsp cooking oil (i used vegetable oil spray) and place meatballs on pan with even spacing. Spray with cooking oil on top.

  8. Bake for 25 minutes then reduce heat to 300 then bake for another 20 minutes.

  9. Serve with bread or pasta and tomato sauce.
