A healthy blend of lean chicken, zucchini, bell pepper, onion, tomatoes,and celery for a high-fiber, low-fat dish that is perfect over rice.

Recipe Ingredients for Chicken and Zucchini Dish

4 cups chicken breast, boneless, skinless
3 cups diced celery, diced
2 cups green pepper, diced
2 cups onion, diced
4 cups zucchini, diced
2 T. olive oil
2 T. minced garlic
3 cups tomatoes, peeled
2 T. chili powder

Recipe Directions for Chicken and Zucchini Dish

Cut chicken breast into bite-sized pieces and brown gently in the olive oil. Add the all the vegetables except the tomatoes. Saute the vegetables until they are just beginning to soften. Sprinkle chili powder over the top and pour the tomatoes over that. Simmer on low for about 30 minutes, until the vegetables are tender. Perfect alone or over steamed rice.
