Recipe Ingredients for Chicken Zucchini Casserole

2 unit (yield from 1 lb ready-to-cook chicken) Chicken, Breast, Meat Only
2 large raw Zucchini
1.25 cup Petite Diced Tomatoes
1 cup, chopped Onions
1 medium Green Bell Pepper
0.5 tbsp Oil Olive Extra Virgin
0.25 cup Bread Crumbs, Dry, Grated, Plain
4 slice (1 oz) Mozzarella, Part Skim Milk, Low Moisture Cheese
2 serving Premium Selection Italian Seasoning
2 dash Pepper, Black
2 serving Garlic Salt

Recipe Directions for Chicken Zucchini Casserole

Cut zucchini to 1/4 inch slices and put in a ziplock baggy with the garlic salt; set aside. Chop onion and bell pepper. Drain canned diced tomato. Use olive oil to grease a 1-qt casserole dish. combine onion, bell pepper, tomato, Italian seasoning until well mixed. Roast or boil chicken breast until almost done and cut into bite sized pieces. When cooled, add to tomato mixture. When zucchini has most of the water drawn off from the salt, drain and add it to the chicken mixture, stirring well. Top with bread crumbs and then top with the cheese. Bake at 350 degrees until bubbly and cheese is melted and slightly browned.
