Recipe Ingredients for Chicken with Winter Vegetables

1 lb chicken thighs
1 cup potatoes, diced
1 cup carrots, diced
1 cup yams, diced
1 tbsp olive oil
4 garlic cloves, minced
2 tsp dried rosemary
1/2 cup chicken broth
2 tsp dijon mustard
2 tsp honey

Recipe Directions for Chicken with Winter Vegetables

  1. Preheat oven to 375 degrees.

  2. Mix Yukon gold potatoes, carrots, sweet potatoes, olive oil, garlic, rosemary, chicken thighs and chicken broth in a 9" x 13" pan. Cover with foil. Bake for 30 minutes.

  3. Remove foil and drizzle the dijon mustard and honey over the pan. Bake 20 - 40 minutes.
