Terrific with mashed pototoes and green beans - a great way to cook boneless chicken without barbecuing.

Recipe Ingredients for Chicken in Wine Sauce

2 1/2 lbs chicken
2 tbl olive oil
2 tsps kosher salt
1 tsp black pepper
1/2 cup white wine
1/2 cup chicken broth
1/2 cup green onions
2 tbl unsalted butter

Recipe Directions for Chicken in Wine Sauce

  1. Cut chicken in small serving strips (about 1 - 2 ounces per strip, about 5 to each half-breast of chicken). Sprinkle with salt and pepper.

  2. Heat olive oil very hot in a large frying pan and brown chicken until golden on each side and cooked through, about 4 minutes per side. Remove to a plate, cover, and let stand.

  3. Deglaze pan with wine and chicken broth. Add the green onions and simmer until sauce has reduced and thickened. Stir in butter until melted. Pour over chicken and serve immediately.
