6 Tbsp. butter small onion, chopped cup all-purpose flour 2 cups chicken broth 3 chicken breast halves, cooked and chopped cup grated carrots 3 Tbsp. chopped almonds 1 tsp. salt 12-oz. can evaporated milk (skim or 2%) 2 Tbsp. cooking Sherry

1 cup Wild Rice, Cooked

Recipe Directions for Chicken and Wild Rice Soup

  1. 1. In a large skillet, melt butter over medium heat. Add onion and cook for three minutes.

  2. 2. Blend in flour with a wire whisk. Once combined, gradually add in chicken broth, stirring constantly. Bring to a boil and stir for one minute.

  3. 3. Add rice, chicken, carrots, almonds and salt. Stir for five minutes.

  4. 4. Blend in evaporated milk and Sherry. Heat to serving temperature. Avoid boiling
