A tasty, creamy soup for a cold day. This soup reminds me of Minnesota!

Recipe Ingredients for Chicken and Wild Rice Soup

2 c. cooked wild rice
2 tbsp. butter
1 tbsp. minced onion
1/4 c. flour
4 c. chicken broth
1/2 tsp. salt
1 c. half and half
1 tbsp. cooking sherry
1/3 c. canned chicken

Recipe Directions for Chicken and Wild Rice Soup

  1. Melt butter and saute onion.

  2. Blend in flour, gradually add chicken broth.

  3. Cook, stirring occasionally until slightly thickened.

  4. Stir in rice and salt. Simmer 5 minutes.

  5. Blend in half and half, sherry, and chicken.

  6. Also may add carrots, almonds, or cheddar cheese.
