Recipe Ingredients for Chicken and Wild Rice Soup

1 tablespoon olive oil
1 large onion, chopped
3 carrots, peeled and chopped
1 cup celery, chopped
4 cloves garlic, minced
1 pound chicken breast, chopped
12 cups chicken stock
3/4 cup wild rice
2 medium potatoes, peeled and chopped
1 teaspoon dried thyme
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon pepper

Recipe Directions for Chicken and Wild Rice Soup

  1. heat oil in large soup pot

  2. add garlic, onions, celery, and carrots.

  3. cook while stirring until tender-5-10 mins

  4. add chicken and cook 3 more minutes.

  5. add everything else, bring to a biol, then reduce heat and put lid on and simmer for 1/2 hour.
