We lightened up the recipe by adding 1/4 c. butter instead of 1/2, and adding skim milk instead of milk/light cream. You can also make with turkey (white meat). Enjoy!!

Recipe Ingredients for Chicken Wild Rice Soup

1 medium onion, chopped
2 celery stalks, diced
2 medium carrots, diced
1/4 cup butter
1/2 cup whole wheat flour
4 cups fat free chicken broth
2 cups cooked wild rice
2 cups skim milk
2 cups chicken breast, diced
1 tsp parsley
1/2 tsp. salt
1/4 tsp. pepper

Recipe Directions for Chicken Wild Rice Soup

Cook wild rice according to package directions and set aside. In a large kettle, saute onion, celery and carrots in butter until onion is transparent. Blend flour into onion, celery, and carrot mixture & cook until bubbly. Gradually add broth, stirring constantly. Bring to a boil; boil for 1 minute. Reduce heat, add wild rice, milk, chicken, parsley, salt and pepper. Simmer for 20 minutes. Makes 10 to 12 servings.
