Light Cheese and a flour-and-milk mixture keep this soup creamy but surprisingly low in fat.

Recipe Ingredients for Chicken and Wild Rice Soup

1 cup uncooked wild rice
1 cup chopped onion
2 garlic cloves, minced
3 cups chicken broth
3 cups 1% milk
1/3 cup flour
10 ounce light velveeta
2 cups chicken breast
1/2 teaspoon black pepper
1/4 teaspoon salt
1/4 cup parsley, fresh, chopped

Recipe Directions for Chicken and Wild Rice Soup

  1. Cook rice according to directions, omitting fat and salt. Heat large pot over med heat; coat pan with cooking spray. Add onion and garlic, sauté 3 min. Add broth, cover and reduce heat.

  2. Combine milk and flour, stirring well with whisk. Add the milk mixture to broth, cook 5 min or until slightly thick, stirring constantly. Remove from heat; add cheese, stirring till melted. Stir in rice, chicken, pepper, and salt. Garnish with parsley.

  3. 8 servings
