Recipe Ingredients for Chicken Wild Rice Soup

6 tbsp butter
1/4 cup minced shallot
1/2 cup all purpose flour
6 cups chicken broth
2 cups cooked wild rice
1 cup carrots
2 tbsp White Cooking Wine
12 oz chicken breast
3 tbsp slivered almonds
1/2 tsp salt
1 cup half and half

Recipe Directions for Chicken Wild Rice Soup

  1. Cook wild rice (1/2 cup dry yields 2 cups cooked) using 1 1/2 cups chicken broth.

  2. While rice is cooking, season chicken to taste (salt, pepper, garlic powder, and a touch of nutmeg goes well in this recipe). Sear the chicken on both sides over medium high heat. Add white wine vinegar and 1/2 cup chicken broth. Cover, lower heat, and simmer approximately 10 minutes. Shred chicken and set aside.

  3. Melt butter in large saucepan;salt and saute onion until soft.

  4. Add garlic and saute until aromatic, about 30 seconds

  5. Whisk in flour until mixed thoroughly

  6. Gradually add broth, whisking constantly to cook mixture to boiling. Continue stirring while boiling for 1 additional minute.

  7. Stir in rice, carrots, chicken (shredded), and almonds; simmer for 5 minutes.

  8. Blend in half and half, cooking to serving temperature.

  9. Optional: add freshly grated nutmeg and pepper to taste. May need to add salt if using unsalted butter and/or broth.
