Creamy chicken dish with onions, peppers and olives

Recipe Ingredients for Chicken in white wine with Olives

600 g chicken breast fillet
1 green pepper
1 red pepper
1 onion
8 mushrooms
12 olives
50 ml white wine
100 ml chicken stock
2 tablespoons cornstarch

Recipe Directions for Chicken in white wine with Olives

  1. Chop or slice the onions, peppers and mushrooms.

  2. In a heavy based pot brown the chicken fillets. While the fillet brown, heat the wine until it boils then simmer for 5 minutes. Add the chicken stock to warm. place the onion, peppers and mushrooms in the pan with the browned chicken pour the stock over. Put a lid on the pot and place the the oven 350f for 25 mins then add the olives and bake for another 15 mins. After the chicken is cooked serve it, use the cornstarch to thicken the sauce if you like.

  3. (You can increase the wine quantity/ or use double cream at the final stage of cooking for a richer flavour) I use a cast iron pot which helps cook a little faster so you might want increase your first cooking stage my a few minutes. Bone chicken can be used just increase the cooking times you can also change the veg, works well if you include with new potatoes just add a little more stock.
