Delicious chicken and vegetables in a light white wine and lemon juice sauce.

Recipe Ingredients for Chicken in a White Wine Lemon Sauce

2 breast, bone and skin removed Chicken, Breast, Meat Only
1 box Penne Dry
1 medium Orange Hothouse Bell Pepper
1 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
2 cup slices Squash, Summer, Zucchini, Includes Skin
3 clove Garlic
5 1tsp Olive Oil
2 cup, pieces or slices Mushrooms
1 serving Chicken Bouillon Cubes
1 cup chopped raw Grape Tomatoes
3 tbsp Salt, Table
1/4 cup Lemon Juice
1 cup, chopped Broccoli

Recipe Directions for Chicken in a White Wine Lemon Sauce

  1. Heat olive oil in the pan and saute garlic.

  2. Cook chicken til nearly through, then add mushrooms.

  3. Start to boil the water for penne and cook as directed.

  4. Add tomatoes, peppers and zucchini/squash.

  5. Season with salt, pepper, oregano and parsley.

  6. Add 3/4 cup white wine and let half.

  7. Then add chicken bouillon and let simmer until pasta is al dente.

  8. Add broccoli for a few minutes to steam.

  9. Drain pasta and add to chicken and vegetables. Do not rinse pasta in cold water.

  10. If necessary, thicken by putting some cornstarch mixture in.

  11. Serve.
