Recipe Ingredients for Chicken & White Bean Chili

2 tablespoon olive oil
2 onion, chopped
8 cloves garlic, crushed
4 ounce diced jalapeno peppers
4 ounce Green Chilies
2 teaspoons ground cumin
1 teaspoon dried oregano
2 tablespoons Better Than Bouillon Chicken
1 tablespoon Better Than Bouillon Vegetable
3 thigh+fillet fillets boneless skinless chicken thighs
4 fillet fillets boneless skinless chicken breasts
2 cups dry white beans
8 cups water

Recipe Directions for Chicken & White Bean Chili

  1. Heat the oil in a pressure cooker over medium-low heat. Slowly cook and stir the onion until tender. Mix in the garlic, jalapeno, green chile peppers, cumin, oregano. Continue to cook and stir the mixture until tender, about 3 minutes. Mix in 7 cups of water, better than bouillon, frozen chicken breasts/thighs and dry white beans. Pressure cook for 30-35 minutes.

  2. Remove the mixture from heat. Add water to desired consistency and tear chicken into shreds.

  3. Serve topped with light sour cream and a nice salad.
