Recipe Ingredients for Chicken-White Bean Chili

1 tbsp olive oil
2 Onions, yellow chopped
4 cloves garlic,minced
1 lb. chicken breasts, cut into small pieces
1 lb. chicken, ground lean
7 oz. green chiles, roasted
1 tsp ground cumin
1 tsp dried oregano
1/4 tsp cayenne pepper
4 cups chicken stock, low-sodium
16 oz kidney beans, white
1 salt and black pepper to taste

Recipe Directions for Chicken-White Bean Chili

  1. Heat the oil in a large pot over medium heat.

  2. Add the onion and garlic and cook for 3 minutes.

  3. Add the chicken and ground chicken, chiles, cumin, oregano, and cayenne. Saute until the chicken is mostly cooked through, about 8 minutes. Add the stock and beans. Turn the heat down to low. Simmer uncovered for at least 20 minutes.
