Skinless chicken breast with wheat berries and spinach tossed with honey dijon dressing

Recipe Ingredients for Chicken and Wheat Berry Salad

2 ounces boneless skinless chicken breast
3/4 cup bulgur
1 cup fresh spinach
1 teaspoon canola oil
1 teaspoon honey
1/2 teaspoon dijon mustard

Recipe Directions for Chicken and Wheat Berry Salad

  1. Cook the chicken in the microwave. Cook the wheat berry in a saucepan. Mix all together.

  2. Note: used bulgur in analysis because wheat berry was not recognized. Wheat berries are slightly higher in calories, carbs, fiber and protein.
