A quick chicken salad I made with left over chicken breasts.

Recipe Ingredients for Chicken Walnut Salad (for sandwiches)

1 chicken breast
1/3 cup mayonnaise
2 tsp mustard
1 1/2 tbsp chopped onion
1/2 cup chopped walnuts
1/2 tsp salt
1/2 tsp pepper

Recipe Directions for Chicken Walnut Salad (for sandwiches)

  1. Chop chicken into 3/4" cubes. Add walnuts and onions and toss together. Add mayonnaise, mustard, salt, and pepper and stir.

  2. Serve on toast or a croissant with cheddar cheese, lettuce, and avocado.
