Recipe Ingredients for Chicken Vindaloo

8 oz chicken
1 cup chopped onion
1/2 tsp ginger paste
1/2 tsp garlic paste
1/2 tsp mustard seeds
1/2 tsp coriander seeds
1/2 tsp cumin seeds
1/4 tsp fenugreek seeds
1 tsp vinegar (I used distilled vinegar)
1 tsp chili powder
1/10 oz coriander leaves
1 tsp extra virgin olive oil

Recipe Directions for Chicken Vindaloo

  1. Grind together ginger, garlic, mustard seeds, red chilies, fenugreek seeds, coriander seeds, cumin seeds to a smooth paste.

  2. Apply this paste to the chicken.

  3. Heat oil and fry onions on a low heat till the onions turn dark brown and crispy. Take them out on a clean kitchen towel to remove all the extra oil.

  4. Grind to a paste along with vinegar.

  5. Add this to the chicken (Add a little water if gravy is too thick).

  6. Leave it aside for 30mins.

  7. Heat a little oil in thick bottomed pan.

  8. Add the marinated chicken with all the marinade.

  9. Cook till chicken is tender and gravy is thickened.

  10. Garnish with coriander leaves.
