Recipe Ingredients for Chicken and Vegitable Soup

56 oz chicken
96 oz stock
1 White Onion
1 medium leek
1 pint button mushrooms
3 large carrots
5 stalks celery
1/2 cup fresh parsley
2 cups spinach
2 cups frozen corn
3 lbs red potatoes

Recipe Directions for Chicken and Vegitable Soup

  1. Saute onion, leek in a small amount of stock.

  2. As onions become tender, but not brown, add celery and carrots.

  3. Add just enough stock to cover.

  4. Shred chicken.

  5. Put stock in large pot.

  6. Put chopped potatoes in stock and bring to a boil. While boiling add sautee'd onion mixture and chicken. 1/2 hour before serving add corn, mushrooms and spinach.
