The flavor of these tostadas is very refreshing.

Recipe Ingredients for Chicken Vegie Tostadas

12 oz chicken breast, cubed
1 cup red onion, chopped
1 cup corn
1 cup zucchini, chopped
1/2 cup salsa
1 cup cheese, monterey jack or colby
1/2 tsp black pepper
6 wheat flour tortillas

Recipe Directions for Chicken Vegie Tostadas

  1. cook the cubed chicken breasts in a sauce pan on med high heat for about 7 minutes.

  2. Add the onion, corn, zucchini, pepper, and salsa to the chicken.

  3. Heat for 5 minutes.

  4. Put an equal amount of the chicken mixture on each tortilla.

  5. Put an equal amount of cheese the top of each tostada.

  6. Broil the tortillas in the oven for 3-4 minutes.

  7. Serve hot.
