Chicken and Veggies Over Penne Recipe

Chicken breasts with as many veggies as you want... in a creamy sauce over protein-plus pasta. *Add red-pepper flakes, garlic cloves, black pepper, and a dash of cilantro.

Recipe Ingredients for Chicken and Veggies over Penne

8 oz Barilla Plus penne
2 cups broccoli
1 cup light sour cream
2 teaspoons all-purpose flour
1/2 cup milk
1 1/2 cups diced cooked chicken breast
3/4 teaspoon dried basil leaves
4 1/2 ounces sliced mushrooms
4 tablespoons grated Parmesan cheese
1 cup roasted red peppers

Recipe Directions for Chicken and Veggies over Penne

  1. In large saucepan or Dutch oven, cook spiral pasta or similar pasta according to package directions, adding broccoli during last 5 minutes of cooking time.

  2. Meanwhile, in medium saucepan, combine sour cream and flour; blend well. Stir in milk; cook over medium heat, stirring constantly, until hot but not boiling.

  3. Stir in chicken, basil, and 3 tablespoons of the cheese. Cook until heated through. *Add red-pepper flakes, garlic cloves, black pepper, and a dash of cilantro. ** you can add mushrooms here, or like I do... cook the mushrooms seperately.

  4. (for cooking the mushrooms separately.... pat of butter (1/4 TBSP) to heated skillet. 4 TBSP of white wine and 2 cloves of chopped garlic. Add mushrooms once butter melted and saute until brown. You can also add a little black pepper... I would add this to the top of the dish.)

  5. Drain pasta and broccoli; return to saucepan. Add chicken mixture; toss gently to coat.

  6. Place pasta mixture in a serving dish and sprinkle with remaining 1 tablespoon of Parmesan cheese, and pass the Parmesan cheese at the table.
