Recipe Ingredients for Chicken & Veggie Whole Wheat Couscous

1 1/2 cups dry whole wheat couscous
1 tbsp. olive oil
3/4 lb boneless, skinless chicken breast
1 red onion
2 cups pineapple tidbits
1 tsp. roasted garlic
1 bell pepper
8 oz. mushrooms
1 zucchini
1 cup frozen asparagus
3/4 cup frozen corn
7 oz. garbanzo beans
1 tsp. paprika
1 tsp. cumin
1 tsp. black pepper
2 tbsp. curry powder

Recipe Directions for Chicken & Veggie Whole Wheat Couscous

  1. Prepare couscous according to package directions and set aside.

  2. While couscous is cooking, put a large nonstick pot with a wide bottom on medium-high heat.

  3. Pour 1 tbsp. olive oil into the bottom of the pot.

  4. Chop the onion and chicken into small pieces, about 1/4-inch for the onion, and 1-inch for the chicken.

  5. Add the chicken and onion, along with the garlic and pineapple, to the pot.

  6. While the onions and chicken are browning, chop the peppers, mushrooms, zucchini, and asparagus into small pieces, about 1/2 inch, or whatever size you like to mix well with the couscous.

  7. Add these vegetables, along with the corn and garbanzo beans, to the pot. Stir thoroughly.

  8. Once the chicken and vegetables are fully cooked, add the couscous and stir.

  9. Add the seasonings to the couscous and meat/veggie mixture, and stir thoroughly.

  10. Let simmer for about 5 minutes, then serve immediately.

  11. Goes great with pitas or carrots dipped in hummus!
