Chicken/Veggie Tacos Recipe

Ground chicken and vegggies for a taco that the kids will eat that's full of veggies!

Recipe Ingredients for Chicken/veggie tacos

1 tbsp olive oil
1 small onion
2 carrots
3 stalks celery
2 zucchini
1 yellow squash
8 ounces mushrooms
1 lb ground chicken
1 head romaine lettuce, washed and thinly sliced
2 tomatoes, chopped
1 cup cheddar cheese, grated
12 corn tortillas
3 tbsp olive oil

Recipe Directions for Chicken/veggie tacos

  1. I like to use the food processor to finely chop my veggies.

  2. I couldn't get the recipe anlyzer to accept taco seasoning blend...I use 1 or two pkgs, depending on how many veggies I add that day...it's a very flexible recipe and great when you have veggies on the verge...use whatever needs to cooked!

  3. Heat oil in pan, add onions and cook until soft or slightly carmelized. Add remaining veggies and cook til moisture has released and reduced.

  4. Add ground chicken or turkey and cook through. Make sure to stir and mash so that your filling is uniform...unless of course, you like your filling chunky...

  5. Add taco seasoning, I usually add a little bit of water but never the full amount requested on the package becaue there is usually so much moisture from the veggies. Simmer.

  6. In the meantime wash and slice lettuce. Chop tomatoes. Grate Cheese. Heat corn tortillas in frying pan using a little bit of oil, drain on paper towels.

  7. Assemble tacos with filling, lettuce, tomatoes, and cheese, fold in half and enjoy!

  8. Optional-

  9. cilantro, chopped green onion, diced green chilies, cabbage instead of lettuce, and of course my son loves sour cream and guacamole...mmmm!
