Healthier version is to substitute Quorn Chick'n tenders (soy and meat free) This is an alternative to traditional tacos, could also be made as a burrito using a larger tortilla shell.

Recipe Ingredients for Chicken and veggie taco

1 flour tortilla
1/8 cup black beans
1/8 cup corn
1/4 cup brown rice
1 tbsp onion
1 tbsp cilantro
1/4 cup chicken
1/8 cup tomato
1 clove garlic
1 slice provolone, low fat
1/4 avocado

Recipe Directions for Chicken and veggie taco

Pan fry chicken and add all other ingredients except the avocado, tortilla and provalone. Spread the avocado on one side of the tortilla, fill with chicken/veggie mixture. Top with provolone slice and enjoy. For extra kick I add Sriracha sauce while pan frying. Also good to mix with a bit of sour cream and top.
