Light Chicken and Vegetable stir fry

Recipe Ingredients for Chicken Veggie Stir Fry

1/4 onion, diced
1/2 tsp garlic, chopped
1 red pepper
1 green bell pepper
1 cup asparagus, chopped
1/2 cup mushrooms, sliced
1/2 cup carrots, sliced
2 chicken breast, sliced thin
1 cup chicken stock
3 tsp chili sauce
4 cups egg noodles
2 tsp cooking spray

Recipe Directions for Chicken Veggie Stir Fry

  1. Spray large pan with 1 tsp cooking spray; saute onion and garlic

  2. Add all veggies and cook almost through, remove all from pan

  3. Spray pan with 1 tsp cooking spray, add thinly sliced chicken breast, cook approx 3-4 minutes, until cooked through, add 1 cup chicken stock and chili sauce

  4. Add all veggies back in, turn down and let simmer for 10 minutes

  5. Divide into thirds and spoon over 1.5 cups egg noodles. Enjoy
