Recipe Ingredients for Chicken and Veggie Stir-Fry

1/3 cup reduced-sodium soy sauce
1/2 cup water
2 tablespoons brown sugar
2 tablespoons lime juice
1 pound boneless skinless chicken breasts, cut into thin slices
2 tablespoons vegetable oil
10 g ginger, fresh
1/2 pound broccoli
3 large carrots, diagonally sliced 1/4-inch thick
1/2 pound fresh asparagus, cut into pieces
1/2 pound fresh snow peas
5 ounces water chestnuts
1/4 cup cashews

Recipe Directions for Chicken and Veggie Stir-Fry

  1. Combine first 4 ingredients in a large shallow dish; blend well and add chicken strips.

  2. Cover and chill at least 1 hour.

  3. Remove chicken from marinade with slotted spoon, reserving marinade.

  4. Heat oil in a wok or large skillet over medium-high heat about 1 minute.

  5. Add chicken and ginger.

  6. Stir-fry 2 minutes;

  7. add reserved marinade.

  8. Reduce heat; cover and cook over medium-low heat 2 minutes.

  9. Uncover and increase heat to medium-high.

  10. Add carrots, and stir-fry 1 minute.

  11. Add asparagus, broccoli, water chestnuts, and snow peas;

  12. stir-fry 1-2 more minutes, or until chicken is done and vegetables are tender-crisp.

  13. Stir in cashews.

  14. Discard ginger.

  15. Serve over rice.
