Recipe Ingredients for Chicken + Veggie Soup with Barley

1 medium(196 g) Squash, Summer, Zucchini, Includes Skin
1 cup, sliced(180 g) Squash, Summer, Crookneck And Straightneck
1 large(150 g) Onions
4 leg, bone and skin removed Chicken, Leg, Meat Only
4 thigh, bone and skin removed Chicken, Thigh, Meat Only
1.75 cup Diced Tomatoes
6 serving Chicken Bouillon Cubes
12 cup (8 fl oz) Water
2 oz Parsley
20 medium Carrots, Baby
1 cup Barley, Pearled
1 cup Beans, Snap, Green

Recipe Directions for Chicken + Veggie Soup with Barley

  1. Boil drumsticks and chicken thighs in a large stockpot until cooked; drain and shred with two forks on a cutting board and add back into the pot. (you can also make your own stock this way to cut sodium, but I can't remember how to off the top of my head. Yay for Google!)

  2. Chop all of the veggies and parsley and add to the pot with the chicken; add two 14.5oz cans of basil, garlic, and oregano diced tomatoes.

  3. Cover with twelve cups of water and add six boullion cubes, or add two cups of water for every boullion cube.

  4. Bring to a boil, then lower to a simmer for at least two hours, or until veggies are soft.

  5. Prepare noodles according to package directions and either add directly to the soup or store seperately to prevent them from getting mushy.

  6. Top with parmesean cheese if you wish and enjoy!
