Recipe Ingredients for chicken veggie and rice soup

2 tbs olive oil
1 medium onion
2 cups frozen peas and carrots
15 oz boneless, skinless chicken breasts
10 cups fat free low sodium chicken broth
1/2 cup brown rice
1 1/2 tbs butter
14 oz canned diced tomatoes
1 cup celery
8 oz mushrooms

Recipe Directions for chicken veggie and rice soup

  1. Heat oil in soup pot

  2. saute onion and garlic

  3. add chicken and cook for a few minutes

  4. add all veggies and broth and butter

  5. when soup comes to a boil, add rice and herbs to taste: i add fresh parsley, sage, tarragon, rosemary and oregano from gardeuce and let simmer for 20 minutes
