Good use of leftover chicken and frozen veggies

Recipe Ingredients for Chicken and veggie rice

1/2 onion
4 cloves garlic
2 tablespoons olive oil
1 1/2 cups chopped mushrooms
2 cups chicken
2 cups broccoli
2 cups green beans
1 1/2 tablespoon chicken bouillon
2 cups water
1 cup rice

Recipe Directions for Chicken and veggie rice

  1. Heat oil in pan, add onion, garlic and mushrooms til golden brown and onion is translucent.

  2. Add cooked chicken (or if its raw cook it before you add the mushrooms etc) and cook til browned.

  3. Add chicken boullion and other dry seasonings such as Cavenders and cajun to your taste and heat it with the chicken mixture for about a minute.

  4. Add frozen veggies, water and rice and heat to boiling then reduce to low and simmer covered for 20 minutes.
