Chicken-Veggie Quiche Recipe

Homemade quiche. This is a great recipe to use for leftover chicken.

Recipe Ingredients for Chicken-Veggie Quiche

1 cup shredded chicken, cooked
24 oz. (2 bags) Steamfresh frozen veggies (broccoli, carrot, cauliflower mix)
4 oz. colby-jack cheese, shredded (can substitute cheddar or american cheese)
2 large eggs
1 cup 2% milk
1 cup flour
1 tbsp unsalted butter, melted
1/2 tsp salt

Recipe Directions for Chicken-Veggie Quiche

  1. In spring-loaded form pan, or 9-inch pie plate, add chicken & defrosted frozen veggies. Place in oven to preheat while you preheat the oven. (Note, the spring-loaded pan is 2" deep - you may need to reduce the oven temp for the 9" pie plate as it is only 1" deep.). Preheat oven to 350 degrees.

  2. While pan, meat, & veggies are preheating, prepare the batter. Whisk together eggs & milk until smooth. Add flour, melted butter, and salt and whisk until batter is bubbly and smooth (can also do this in a blender). Let batter rest until oven is preheated.

  3. Remove pan from oven. Sprinkle cheese over mixture. Pour batter over mixture. Place pan back into oven. Bake until golden brown, about 20-30 minutes.

  4. Let cool for 10-15 minutes. Slice quiche into 8 equal pieces and serve.
