You can put these in a pita with lettuce and tomato, serve as a hamburger or just eat by themselves.

Recipe Ingredients for Chicken & Veggie Patties

1 lb ground chicken
1 medium onion, chopped
1 medium zucchini, grated
2 medium carrots, grated
2 cloves garlic, minced
2 tbs lemon juice
1 egg
1 tbs extra virgin olive oil
1 cup plain breadcrumbs

Recipe Directions for Chicken & Veggie Patties

  1. Saute all veggies in skillet with oil over medium heat until soft, do not let brown.

  2. Let veggies cool.

  3. Mix with all other ingredients and form patties.

  4. Put into oven, preheated to 400 degrees for 30 to 45 minutes or until is done.
