Hearty healthy chicken noodle soup with veggies for added vitamins and minerals! I had to tweak my recipe from before because it took much more broth when I actually made it, and it made a TON!

Recipe Ingredients for Chicken Veggie Noodle Soup

96 ounce chicken broth, fat free
12 ounce noodles, whole wheat
12 ounce mixed vegetables
8 ounce chicken breast, skinless

Recipe Directions for Chicken Veggie Noodle Soup

  1. cook chicken in 32 ounces of broth in the crock pot until done.

  2. When ready to prepare, cook noodles in remaining 64 ounces of chicken broth.

  3. When noodles have cooked, break up the chicken and add it and the broth into the soup. I skimmed off the junk from where the chicken had cooked.

  4. Add bag of mixed veggies and heat until all ingredients are heated through.

  5. You might add the veggies a little before the noodles are done so that you don't over cook them.

  6. This recipe makes a TON. I estimated it at 16 servings...probably about 2 cups each. It FILLED my big pan, and I almost thought I should invest in a stock pot!
