Chicken and Veggie Loaf Recipe

Recipe Ingredients for Chicken and Veggie Loaf

400 g chicken, ground, raw
60 g oats, quick-cook
1 tsp olive oil
3 cloves garlic, fresh
100 g carrots, fresh
35 g celery, fresh
80 g red bell pepper, fresh
120 g tomatoes, ripe fresh small
1 tbsp Worcestershire sauce
1 tbsp dried parsley
1/4 teaspoon dried oregano
65 g egg, whole
1/4 tsp salt
1 pinch of freshly ground black pepper

Recipe Directions for Chicken and Veggie Loaf

  1. Preheat oven to 180C/350F.

  2. Cut carrots, celery, tomatoes and pepper into large chunks and blitz in food processor. Drain & save the liquid.

  3. Crush garlic and sauté with the olive oil until it just begins to brown. Remove from heat & allow to cool.

  4. Mix all ingredients together, including the veggies & garlic, adding salt & pepper to taste. Add some or all of the liquid from the veggies if too dry/crumbly (consistency should be firm but moist) - remember the oats will absorb any liquid in the mixture when cooking.

  5. Line a loaf tin with baking/greaseproof paper and pat the loaf mixture into the tin to even out the surface. Cover with aluminium foil.

  6. Bake for 1 hour, removing foil for final 10-15mins.
