Quick weeknight supper with tons of veggies

Recipe Ingredients for Chicken Veggie Florentine

15 oz boneless skinless chicken breasts
12 oz spinach
12 oz zucchini
8 oz red bell peppers
2 1/2 oz mushrooms
2 T. olive oil
1 t. garlic powder
1 t. ground coriander
1 t. chili powder
1 pepper to taste
2 T. lemon juice

Recipe Directions for Chicken Veggie Florentine

  1. Cut chicken into strips and set aside. Wash spinach leaves thoroughly. Cut zucchini, peppers, and mushrooms into 1-2" pieces. Preheat oven to 400 degrees. Put large pot fitted with steamer basket and 2-3" water on to boil.

  2. Place all veggies except spinach in roasting pan. Sprinkle with 1 tbs olive oil and stir to coat. Season with black pepper if desired. Place in preheated oven for 20 minutes.

  3. Meanwhile, heat remaining 1 tbs. oil in large skillet. When oil is hot, add coriander, chili powder, and garlic powder. Stir constantly for 30 seconds. Add Chicken pieces and cook until done,4-5 minutes.

  4. When water is boiling, place spinach leaves in basket, cover and steam spinach just until wilted 2-3 minutes.

  5. Spread spinach on large serving platter, place chicken on top of spinach and vegetables around edges. Sprinkle whole platter with lemon juice. Enjoy!
