Yummy chowder soup from South Beach Cook Book

Recipe Ingredients for Chicken & Veggie Chowder

6 cups low sodium chicken broth
4 carrots, chopped
2 cups celery, chopped
2 onion, chopped
4 ounces mushrooms, diced
2 clove garlic, minced
1 tsp fresh thyme leaves, chopped
3 cups turkey, chopped
4 tbsp margarine
6 tbsp whole wheat flour
2 cup skim milk
2 cup broccoli florets
2 tbsp parsley, chopped
1/2 tsp black pepper

Recipe Directions for Chicken & Veggie Chowder

  1. combine broth, carrots, celery, onion, mushrooms, garlic, thyme and salt in large pot

  2. bring to a boil over high heat

  3. reduce heat to low, cover and simmer 20 minutes until veggies are tender.

  4. remove 1/2 of the vegetable mixutre to a food processor and process until pureed.

  5. Return to saucepan.

  6. Stir in turkey or chicken, cover and simmer for 15 minutes, or until the chicken or turkey is no longer pink.

  7. Melt margarine in a small saucepan over medium heat. Stir in the flour until smooth and cook for 1 minute. Gradually add milk and cook, stirring constantly, for 3 minutes or until thickened. Stir into the meat mixture. Add asparagus or broccoli, parsley, and pepper and cook for 5 minutes or until heated through.
